Peel and wash the sweet potatoes with a peeler, dice into long strips approximately 5mm. For extra crispiness, soak in cold water for an hour
Place sweet potato strips into a large zip lock bag, then add in the olive oil first, then the Za’atar. Seal the bag, blow some air so that it becomes puffy like a ballon. Then shake in all directions vigorously for a couple of minutes
Preheat the oven to 200c convention, prepare a flat tray covered with foil. Dump the seasoned strips onto the tray, just enough to cover the tray in one layer. One layer is most ideal for an even toast across all strips
Place the tray into the middle of the oven, cook for 25 minutes.
Switch to oven to broil mode (top heater only), turn the temperature to high, then move the tray to the top rack. Broil for 5 minutes until the surfaces are crisped to your liking.
Finish with micro herbs and flaky salt for a restaurant vibe.
